Magical Chocolate Factory...

I am looking forward to seeing this movie... I remember the original when I was
younger... and I love seeing Johnny Depp in anything - so it will be two bonuses
for me - on this one...
I wonder if they sell more CHOCOLATE at this movie than others...

Recipe - Zucchini Loaves
although this isn't candy - it's so good it runs a close
second to candy...

Returned from vacation and finally got a chance to respond back to my
emails. While on our trip, came across this wonderful Zucchini recipe
and wish to share it with all.
Blair's Zucchini Loaves
3 large eggs, lightly beaten
1 1/2 cups granulated sugar
3 cups shredded zucchini (1 1/2 pounds)
3/4 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
1/2 cup wheat germ
1/4 cup nonfat dry milk powder
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup sifted powdered sugar
1/2 teaspoon vanilla extract
2 tablespoons milk
1/4 cup chopped pecans, toasted
Combine first 5 ingredients in a large mixing bowl, stirring well.
Combine all purpose flour and next 9 ingredients, stirring well. Add
zucchini mixture, stirring just until blended. Spoon batter evenly
into 2 greased and floured 8x 4 x 2 1/2 loafpans.
Bake at 350 for 45 to 50 minutes or until a wooden pick inserted in
center comes out clean. Cool pans on wire rack 10 minutes; remove
from pans and cool completely on wire rack.
Combine powdered sugar, 1/2 teaspoon vanilla, and milk, stirring
until smooth. Drizzle evenly over loaves; sprinkle with pecans.
Yield: 2 loaves.
**(These loaves may be frozen up to one month; drizzle with glaze
after thawing.)

Good news. Research says you can have your cake and
eat it, too. As long as that cake is chocolate.
For centuries, chocolate has been used to treat diseases
and maladies such as depression. Civilizations from
Mexico to Europe have hailed chocolate as an aphrodisiac.
The U.S. government officially recognized its virtues in
World War II, making the chocolate candy bar standard
issue for the military.
Chocolate's scientific name, theobroma cacao, is literally
translated as "food of the gods," and we chocolate cravers
don't need any studies to tell us the power of chocolate
in mood alteration. Its feel good chemicals have long been
associated with feelings of love, safety, and comfort.
Maybe that's why Americans eat an average of 12 pounds
of chocolate per year.
Chocolate contains vitamins A, B1, C, D, and E, as well
as potassium, sodium, iron, and fluorine. Now, researchers
say those creamy chocolate confections may actually help
us live longer, too.
Harvard researchers tracked nearly 8,000 males, with an
average age of 65. Those men who enjoyed chocolate and
candy lived almost a year longer than those who did not.
Those who ate one to three candy bars per month had a 36
percent lower risk of death (compared to the people who
ate no candy), while those who ate three or more candy
bars per week had a 16 percent lower risk.
Why? The researchers say they don't know for sure, but
that it might have something to do with antioxidants.
Chocolate contains the same antioxidant chemicals as
wine (phenols). In the chocolate bar, phenols help
preserve the fat. In our bodies, phenol can help
prevent atherosclerosis.
Like anything, chocolate is best enjoyed in moderation.
Just one ounce of solid chocolate packs about 150 calories
and can be as much as 50 percent fat. So, for your next
chocolate fix, consider reduced fat alternatives, such
as chocolate covered foods.

Vintage Cookbooks...
although this isn't candy or even sugar related - it
is food related - and a few thoughts I wanted to
share with you...
I came across a site the other day that was talking
about finding a vintage cookbook a small 5 x 7 called
"Betty Crocker's Guide to Easy Entertaining: How to
Have Guests - And Enjoy Them"
It got me to thinking how fun it would be to be in a
group of others that also love to collect and read
vintage cookbooks... actually not only vintage but
any sort of cookbook... it's been a passion of mine
to read cookbooks since I was a child... picked up
the practice watching my mother drink a cup of coffee
and looking through cookbooks... she always loved to
try something new and was (and is) a GREAT cook...
when I get a chance I am going to start a web ring
sort of link exchange for others like me - that love
to look through cookbooks...
when I found this article about the cookbook mentioned
above - it got me to thinking if maybe I might also be
able to find the same cookbook for my collection...
I love to check out links to sites related to cookbooks...
never know what you will find - online to look at - free...

here's a recipe from the Betty Crocker cookbook
mentioned above:
this is a luncheon type item:
Cream of almond soup
1 tablespoon butter
1 tablespoon flour
¾ teaspoon salt
1/8 teaspoon pepper
1½ to 2 cups chicken stock or consommé
¾ cup finely chopped, toasted almonds
2 cups cream
Grated rind of 1 lemon
Paprika
Melt butter over low heat. Blend in flour, salt
and pepper. Cook over low heat, stirring until mixture
is smooth and bubbly. Remove from heat.
Add chicken stock and almonds.
Boil 1 minute, stirring constantly.
Add cream. Heat through; do not boil.
Serve sprinkled with lemon rind and paprika.
Servings: 4 to 6.

April Fool's Prank Candy ...
April Fools Prank Dessert - and - Dinner
1 1/2 lbs. extra lean ground beef
1 eggs
1 cup dry breadcrumbs
2 Tbls. minced fresh onion
1 Tbls. lemon juice
2 Tbls. brown sugar
1/3 cup chopped fresh parsley
2/3 cup ketchup
4 ounces of chili sauce
4 cups semisweet chocolate chips
In a large bowl combine the ground beef, egg, breadcrumbs,
onion and parsley... make 3 dozen meatballs about 1.5 inches
meatballs. Combine lemon juice, sugar, ketchup and chili sauce
set aside about 6 meatballs to cook separately for the April Fools
Surprise for your Family - those you will brown in a skillet on
the stove and then wrap in paper towels to soak off the grease...
place those 6 in the refrigerator to cool till later.
In a crock pot (electric slow cooker)... once the sauce has been
thoroughly combined - gently stir in the meatballs.
Set the cooker dial on low heat, cover with lid and cook for
8 - 10 hours.
Now - for the April Fools Day - Prank on Your Family:
Melt 4 cups of semisweet chocolate chips..
Take the chilled refrigerated 6 meatballs that you
browned in the skillet on the stove... stick a toothpick
in each one and gently lower them totally down into
the melted semisweet chocolate chips... gently
rotate in the chocolate to completely coat...
set them on wax paper in a plastic dish that will
have a lid you can tightly seal and re-refrigerate...
after dinner... bring them out on a plate for desert...
call them Buckeyes... LOL....

Lemony Rum Ball
Lemony Rum Balls
1 cup confectioners' sugar
1/2 teaspoon allspice
1 1/2 cups crushed vanilla wafers
1/2 teaspoon cinnamon
1/2 cup flaked coconut
1/2 teaspoon dried lemon peel
1/2 cup finely chopped pecans (pecan meal)
2 tablespoons lemon juice
3 tablespoons rum
2 tablespoons light corn syrup
1/3 cup granulates sugar (just to coat the outer balls)
In a bowl mix together the confectioners sugar, allspice,
vanilla wafer crumbs, cinnamon, coconut, lemon peel and
pecans. Add in the lemon juice, rum and corn syrup.
Thoroughly mix well and roll pieces into 2 dozen one inch
balls. Take a plastic bag and put in 1/3 cup of granulated
sugar, then taking 3 to 4 balls at a time coat them with the
granulated sugar and then remove them from the bag. Place
into a container that will seal well for storage. To bring
the flavor up, to develop the flavor leave covered and stored
for five to seven days for optimum results.
This is perfect for those that love the flavor of lemon...
and these are quick to make... only takes about 15 minutes...

Recipe - Candy Bar Pie ...
SNICKERS Pie...
.
even though this is a Pie - it's made of candy bars....
Candy Bar Pie
1 package (15 oz.) Pillsbury All Ready Pie Crust
Filling:
5 mini 2.07 oz. SNICKERS Candy Bars
1/2 cup sugar
2 eggs
12 oz. cream cheese - softened
1/3 cup sour cream
1/3 cup creamy peanut butter
Topping:
2/3 cup milk chocolate chips
3 Tablespoons whipping cream
Preheat oven to 450 F.
Prepare 9 inch pie crust in pie pan - according to package instructions.
Bake at 450 F. for 5-7 minutes or until pie crust is very light golden brown.
Remove from oven and let cool.
Reduce oven temperature to 325 F.
In a small bowl combine cream cheese and sugar until smooth.
One at a time add in the eggs beating well after each one.
Add peanut butter, sour cream and beat mixture until smooth.
Cut up the mini candy bars in half lengthwise into pieces
that are about a 1/4 inch eac.
Spread the candy bar pieces over a partially baked pie crust.
Pour the mixture you made earlier over the candy bar pieces. Bake
for 30-40 minutes or until the center is set.
Remove from heat and cool completely.
In a small saucepan - heat whipping cream until very warm.
Remove from heat.
Stir in chocolate chips.
Stir until melted chocoate chips are smooth.
Spread over the top of the pie.
Refrigerate 2-3 hours before serving.
Store in refrigerator.

Candy Bar Pie
1 package (15 oz.) Pillsbury All Ready Pie Crust
Filling:
5 mini 2.07 oz. SNICKERS Candy Bars
1/2 cup sugar
2 eggs
12 oz. cream cheese - softened
1/3 cup sour cream
1/3 cup creamy peanut butter
Topping:
2/3 cup milk chocolate chips
3 Tablespoons whipping cream
Preheat oven to 450 F.
Prepare 9 inch pie crust in pie pan - according to package instructions.
Bake at 450 F. for 5-7 minutes or until pie crust is very light golden brown.
Remove from oven and let cool.
Reduce oven temperature to 325 F.
In a small bowl combine cream cheese and sugar until smooth.

nope... fudge is not a candy...
many cooks refer to it in the same sections of cookbooks as
they do for cookies or bars... fudge is a dessert item in and
of itself... sort of like calling something a cookie and there are
zillions of types of cookies...
are you hungry for fudge now ??
I have made myself hungry for it - with all the research I did...
I came across recipes and varieties of fudge that I had never
heard of or even ever considered making... it will be fun to give
them a try as time goes on... not too often though...
I have zero self control when there is FUDGE in the house...
