Lemony Rum Ball
Lemony Rum Balls
1 cup confectioners' sugar
1/2 teaspoon allspice
1 1/2 cups crushed vanilla wafers
1/2 teaspoon cinnamon
1/2 cup flaked coconut
1/2 teaspoon dried lemon peel
1/2 cup finely chopped pecans (pecan meal)
2 tablespoons lemon juice
3 tablespoons rum
2 tablespoons light corn syrup
1/3 cup granulates sugar (just to coat the outer balls)
In a bowl mix together the confectioners sugar, allspice,
vanilla wafer crumbs, cinnamon, coconut, lemon peel and
pecans. Add in the lemon juice, rum and corn syrup.
Thoroughly mix well and roll pieces into 2 dozen one inch
balls. Take a plastic bag and put in 1/3 cup of granulated
sugar, then taking 3 to 4 balls at a time coat them with the
granulated sugar and then remove them from the bag. Place
into a container that will seal well for storage. To bring
the flavor up, to develop the flavor leave covered and stored
for five to seven days for optimum results.
This is perfect for those that love the flavor of lemon...
and these are quick to make... only takes about 15 minutes...
